Dr. Teddy Seyoum, Lecturer in Human Nutrition
Dr Seyoum completed his PhD in human nutrition from Oxford Brookes University, Oxford, focusing on the role on micronutrients on carbohydrate metabolism with reference to glycaemic response, glycaemic index, energy expenditure and anthropometry variations in males and females sexual dimorphism vis-à-vis glucose metabolism. He also has a Masters degree in World Animal Production/Food Security from Bangor University, Wales and a BSc (Hons) in Public Health Nutrition from Oxford Brookes University, Oxford. He is a reviewer for the British Medical Journal - Case Report. He is also a Trustee - Director Board Member for the Welsh Refugee Council.
Dr Seyoum has engaged with key public health stakeholders and policy-makers nationally and internationally. His research to date has particularly focused on carbohydrate metabolism and energy metabolism with reference to type 2 diabetes and metabolic syndrome. Dr Seyoums’ work has included the influence of minerals on dietary induced thermogenesis, the effect of minerals on glucose metabolism, the effect of dietary induced thermogenesis on glycaemic response and glycaemic index, the effect of anthropometry variation on glucose metabolism, the impact of minerals on insulin bioavailability, the development of functional energy-rich foods to resuscitate malnourish children, food/nutrition policy and the assessment of food security. He will continue to collaborate with the Functional Food Centre at Oxford Brookes University.
